We have quite a few get togethers over the summer. Recently we had one that we forgot about until hours before, and we were supposed to bring the dessert! (oops). I looked at the ingredients I had on-hand and decided to make a peach cobbler. Cobblers are kind of great like that, you just use some sort of fruit with a combination of flour and sugar and you look all prepared, what-do-ya-know!
So here's my take on it, it's got some nutmeg and cinnamon which makes it such a light and refreshing dessert with that little bit of spice which is fantastic with peaches. Make this for your get together and people will question if you made it from scratch! (of course you did, you're awesome like that!).
Amazing(ly simple) Peach Cobbler
Ingredients
1/2 cup unsalted butter, melted
1 cup all-purpose flour
3/4 cups sugar (for batter)
1 tablespoon baking powder
Pinch of salt
1 cup milk
4 cups fresh peach slices
3/4 cups sugar (for peach mixture)
1 tablespoon lemon juice
1 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
Instructions
Step 1 Melt butter in a sauce pan and pour into a 13- x 9-inch baking dish.
Step 2 For the batter, combine flour, sugar, baking powder, and salt in a bowl, add milk and mix just until it's combined.
Step 3 Add sugar, peach slices, and lemon juice to a saucepan and boil, stirring constantly, until peaches are slightly soft. Pour peaches over the batter, and sprinkle the nutmeg and cinnamon.
Step 4 Bake at 375° for 40 to 45 minutes or until golden brown. Serve warm or cool. (High altitude, bake for 35-40 minutes.)
