GOOEY S'MORES BROWNIES

Nothing says "Summertime" more than the smell of s'mores cooking! This recipe is so easy it will become one of your summer regulars. So good, they are guaranteed to disappear the fastest at the summer BBQ!




This recipe is for an easy and quick dessert. Normally I wouldn't put a box mix of anything into a recipe, but I wanted to make this simple. Now, if you want to make the brownies from scratch, you can use any brownie recipe prepared according to the directions and use that instead. Either way, they will be delicious.

You can buy Gluten free versions of marshmallows, brownie mix and graham crackers!

How to prepare these delicious brownies:

Prepare a 9x13 baking dish by spraying and cutting parchment paper to fit. Preheat oven to 350°.

Put graham crackers in a food processor and pulse until finely ground.

Add in melted butter and sugar.

Press mixture into 9x13 dish. I just used the bottom of a measuring cup to press it in firm.

Pour in prepared brownie mixture.

Bake for 20-23 minutes, until it is set.

Remove from the oven and cover with marshmallows, you may not use the entire bag.

Broil on high for just a few minutes. Keep an eye on it!

TIPS:

Cool them in the freezer for 15 minutes so that they can be cut more easily.

To cut the brownies cleanly, keep a knife in a pitcher of hot water, after each cut, wipe off the knife and dip into the water again. This will give super clean cuts to this sticky gooey brownie.

Make sure to keep an eye when broiling, they can burn fast! Unless you're one of those "char the marshmallow till it's ash" kind of people....then burn away.

For some extra pizzaz, you can sprinkle chocolate chips on top of the marshmallows before broiling.



Let's talk about what not to do. There are a LOT of recipes out there, from a lot of people who have no idea what they're doing. That's kind of the bad thing about how easy it is to start your own blog, or however they are choosing to put out recipes. I tend to read a lot of recipes and pick them apart. You have to carefully read them and see if they make sense.

I chose a random brownie recipe for an example below. This recipe also claims they are "the best homemade brownie". People can title recipes however they want, doesn't mean it's true.

Right off the bat, I notice this is a method that is usually used to make cakes, which is the whipping eggs. You want your cakes nice and light and aerated. Why would we do this in a brownie recipe? Do you want your brownies fudgy and dense? I do. This method adds air to the eggs and stretches the proteins, adding lightness. Not what you usually want for brownies.

Also, it says that you want your toothpick to be clean before you take the brownies out. This is also a way to test for cakes to be done. Brownies will continue to cook in the pan, so you want to take them out BEFORE the toothpick is clean. They need to be set, but not already so dried out that a toothpick is clean.

Example of not so great brownie recipe:

  1. Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.

  2. In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.

  3. Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

So just remember to keep an eye out for odd recipe ingredients and processes.

  • 1/4 cup sugar

  • 1 box brownie mix prepared according to box

  • 1 10 oz package mini marshmallows
